These tasty treats are coming from our Scottish and Columbia king salmon. Collars aka; "karma", are the piece of meat located between the cheek and belly.  They are best grilled or broiled well done and crispy.  Just salt and pepper and a little olive oil is a great simple way to prepare them and let the flavor shine!
